Sweet And Sour Carrots Recipe
1 lb. carrots, sliced
1 green pepper, chopped
1 (8 oz) can pineapple chunks
2 Tbsp. cornstarch
2 Tbsp. vinegar
2 tsp. soy sauce
Cook carrots, covered, in samll amount of water until tender - 15 minutes. Add green pepper, cover and cook 3 minutes more. Drain. Drain pineapple,
reserving 1/3 cup liquid. In saucepan, combine sugar and cornstarch. Stir in pineapple liquid, vinegar and soy sauce. Cook and stir until bubbly. Stir in
vegetables and pineapple. Heat through.
