Overnight Lime Pickles Recipe
1c. Lime juice
8c. Sugar
3QT.Vinegar
2 Gallons Sliced Cucumbers
1 Gallon Water
3 TBSP Salt
1 TBSP pickling Spice
Soak cucumbers in water and lime juice for 24 hours. Drain, rinse and soak for an addditional 2 hours in clear water. Mix sugar, vinegar, salt, and pickling spice in large pot and bring to a boil. Cook for 30 minutes. Add cucumbers, 2 additional cups sugar and 1 teaspoon mustard seed (optional). Boil for 30 more minutes. Place in jars while still hot put lids on and turn upside down for 5 minutes. This seals the lids. When cool, eat and enjoy.
