Greek Salad Recipe
Prep: 5 min.
1-1/3 cups spinach leaves, washed and torn into pieces, tough stems discarded
1/2 lb. packaged salad
1-1/4 tomatoes, cut into wedges
3/4 cucumber, peeled and thinly sliced
3/4 red bell pepper, seeded and thinly sliced
3 ounces pitted black olives, thinly sliced
3 ounces feta cheese, crumbled
1/2 cup Italian dressing
3/4 cup plus 1 Tbs. croutons
Combine first 7 ingredients in a salad bowl and toss. Pour dressing over salad just before serving. Season with salt and pepper to taste
and toss. Serve with croutons.
