Golden Carrots Recipe
4 cups thinly sliced carrots
1 cup unsweetened pineapple juice
1 cup water
2 tbs grated lemon rind
1/2 cup golden raisins
2 tsp margarine
1 tsp vanilla extract
1/2 tsp ground mace

Combine carrots, pineapple juice, water, and lemon rind in a medium saucepan; bring to a boil. Cover, reduce heat, and simmer 10 to 12 minutes or just until carrots are tender. Remove from heat and drain carrots, reserving 1/4 cup liquid. Stir 1/4 cup liquid and remaining ingredients into carrots. Serves 8.
