Greek Salad And Tofu Wraps Recipe
200g Smoked Tofu, cubed
2Tblsp Olive oil
1 zucchini (courgette), sliced
4 flatbreads
4Tblsp humus
2 Large Tomatoes, cut in wedges
12 Stoned Olives
1 Shallot peelled and sliced
150g Feta cheese
100g Rocket leaves

1. TOSS tofu cubes in olive oil and fry in a hot frying pan for 2 mins, turning a few times.

2. REMOVE and add zucchini slices to the pan. Cook for 5 mins, or until softened and scorched on both sides.

3. SPREAD the flatbreads with humuos and divide tofu, zucchini, tomato wedges, olives, sliced shallot, feta and rocket leave among them.

4. ROLL up and serve.
