Busy Night Black Bean Chili Recipe
2 cans black beans
1 can diced tomatoes
1 can no-salt added sweet corn
1 cup water
1/2 cup TVP
1 pkg chili seasoning
1 TBSP dried minced onion
2-4 cloves minced garlic
1/4 tsp oregano
1/2 TBSP ground cumin
1/2 TBSP chili powder
3-4 drops Tabasco sauce
Put everything in a large pot, stir well and bring to a boil. Reduce heat and simmer, stirring occasionally, for 15 minutes or more (however long it takes you to clean off the table/make some brown rice/take care of the kids/whatever). Serve on a bed of brown rice (I usually have a big bowl pre-cooked in the fridge; tonight I used instant brown rice--12 minutes in the microwave).
To me, this is comfort food. We have it a lot. It makes a nice big pot, too, so even if we eat a lot, there is some to take for lunch the next day.
