Ellen's Third Place Chili Recipe
Keep Up with the Vegetarian Times!
Got a can opener and a "defrost" setting on your microwave? Then you can make my chili recipe, the third place winner in the Valentine's Day Chili Cookoff. Thanks to all the kind folks who requested my recipe, which, after you read it, you'll probably judge it to be no recipe at all.
At any rate, the "secret ingredient" is Morningstar Farms meatless crumbles. At my Kroger, they're in the frozen section with the vegetarian burgers. It comes in a little wrapped package like bulk sausage.
And, if (like me) you really want to make the recipe simple, skip the onion and garlic and buy diced tomatoes with onion and use garlic powder (which I did for the cookoff!).
1 lb. Morningstar Farms meatless crumbles, thawed and crumbled
2 cans diced tomatoes
2 cans crushed tomatoes
1 can corn, undrained
1 can kidney beans
1 tbsp. olive oil
1 onion, diced
2 or 3 cloves garlic, chopped
1 tbsp. chili power
1 tsp. cayenne pepper (more or less to taste)
1 tsp. black pepper
1 tsp. salt
Saute onion and garlic in olive oil. Dump all other ingredients into large pot or crock pot. Add onion and garlic. If it seems thick, add another can of crushed tomatoes. Simmer a couple hours.
