Curried Lentils Recipe
1 cup dried lentils
3 cups broth or water
2 large onions, chopped fine, divided
4 carrots, sliced or chopped
1 clove garlic
1 tsp curry powder

In a medium saucepan, combine lentils, broth, onions, garlic, carrots and salt, if desired. Bring to a boil, then simmer, covered, for 30-40 minutes, until lentils are tender. If you want soup, add curry powder and serve. If you prefer a thicker stew (we like it thick served over rice or in pitas) drain it or cook it uncovered, adding curry powder at serving time.
