Bisquick Vegetable Meal Recipe
2 cups chopped zucchini (I've used other green vegetables as well, like broccoli)
2 cup chopped carrots (or other veggies)
2 cups chopped tomato (I've substituted an equal amount of drained, chopped canned tomatoes and actually think the flavor's better)
2 cups chopped onion
2/3 cup grated parmesan cheese
2 cups milk (I've used nonfat)
1 cup Bisquick (I've used both regular and nonfat)
4 eggs
1 tsp salt and 1 tsp pepper (I also add basil)

Mix the vegetables in a big bowl. Mix the cheese, milk, Bisquick, eggs, and salt/pepper/spice in another bowl. Then mix the two together. Grease a glass baking dish (I forget how big mine is--it's probably 9x13", it's a pretty standard size large Pyrex dish). Pour the food in. Bake at 400°F for 35 minutes. (Longer if it doesn't seem the right consistency. To tell you the truth, I don't know what consistency it's supposed to be. But it produces a nice batch of cooked vegetables linked with a tasty batter, at any rate!)
