African Vegetarian Stew Recipe

Ingredients
  • 4 sm Kohlrabies, peeled and cut into chunks
  • (Chick-peas) with liquid
  • 1/2 c Couscous -or- Bulgar Wheat
  • 1 lg Onion, chopped
  • 1/4 c Raisins, dark or golden
  • 2 Sweet Potatoes, peeled and cut into chunks
  • 1 tsp Ground Coriander
  • 1/2 tsp Ground Turmeric
  • 2 Zucchini, sliced thick
  • 1/2 tsp Ground Cinnamon
  • 5 Tomatoes, fresh -or- 16 oz Can Tomatoes
  • 1/2 tsp Ground Ginger
  • 1/4 tsp Ground Cumin
  • 15 oz Can Garbanzo beans
  • 3 c Water

Directions

  1. Combine all the ingredients in a large saucepan.
  2. Bring to a boil, lower the heat, and simmer until the vegetables are tender, about 30 minutes.

Comments
Note: Serve the couscous separately, if desired. Parsnips may be substituted for the kohlrabi.

This recipe was very good but too sweet for my taste. I modified the recipe by adding a 5th kohlrabe, 28 oz can of diced tomatoes instead of 16 oz, 1.5 cans of garbanzo beans and 2.5 cups water. Do not make the cubes too big or too small. It is a nice change from all the lentil stews... and perfect for fall. This is ther 3rd time I am making it and it will be a side dish at the Thanksgiving table and a main dish for those who do not eat meat. Not a huge amount of work and rewarding.
