Vegetable Tortilla Soup Recipe
2 cans chicken broth-I used the Swanson's fat free/reduced sodium - 14 oz each
1 (10 oz) can tomatoes and green chiles-I used the milder Ro-Tel, and it was plenty spicy
1 (8 oz) tomato sauce
16 oz package frozen mixed vegetables
2 cups water
18 tortilla chips, broken
1/2 cup shredded cheddar cheese

Combine all ingredients except chips and cheese. Heat to boiling, reduce heat and simmer 15 minutes. Divide chips and cheese evenly among 6 bowls. Ladle soup into prepared bowls and serve immediately.
