Southwestern Beef And Lentil Stew Recipe
1 pound stew meat, cut into 1 inch chunks
2 tbsp. flour
2 tbsp. oil
1 cup dry lentils, rinsed and drained
1 can stewed tomatoes
1/4 naturally brewed soy sauce (I use low sodium)
2-3 tsp. diced jalapeno peppers (don't get juice on your hands!)

Coat meat with flour. Brown in hot oil on all sides in large pan. Add lentils, tomatoes, soy sauce and 1 3/4 cup water; stir once. Cover and simmer 2 hours or until beef and lentils are tender. Gently stir mixture occasionally. Stir in jalapenos and cook only until heated. Garnish with sour cream, fresh cilantro and red pepper as desired. Serves 4-6
