Shrimp, Chicken And Sausage Gumbo Recipe

1 1/2 Lbs. of shrimp
1 Lb. of chicken breast
1 Lb. of sausage
3 Quarts of water
3 Quarts of seafood stock
2 lbs. tomatoes
1/2 cup of oil
1 cup of flour
1 cup green pepper chopped
1 medium onion chopped
1 cup of celery chopped
1 tbsp. chopped garlic
1 bay leaf
1 tsp. Thyme
1 tsp. Basil
1 tsp. Cayenne pepper
1 tsp. Black pepper
2 tsp. Salt
1 tsp. Cajun' spice
5 cups of whole grain rice

In a large stock pot, add oil, peppers, onion, celery and garlic. Saut until onions are soft. Add sausage and chicken saut until browned. Add the diced tomatoes saut until soft. Add the flour to make a roux, then add the cold water and stock. Bring to 160°F then add the shrimp. Bring to a boil stirring constantly. Add 5 cups of uncooked rice and cook until thickened. Serve with fresh cornbread.
