Old Time Chicken Soup Recipe
1 TBSP Butter
2 Celery Stalks, diced
2 Carrots, pared & diced
5 CUPS Cold Chicken Stock
1 1/2 CUPS Noodles
1 1/2 Chicken Breasts, boned, skinned & diced
Pinch of Basil
Salt & Pepper, to taste
Heat butter in a saucepan. When hot add celery & carrots. Cover and cook for 3 minutes over medium heat. Stir and pour in Chicken stock; add basil, salt & pepper. Bring to a boil. Add noodles and stir. Cook, partly covered 12 minutes overmedium heat, stirring twice.
Meanwhile, put chicken in a separate saucepan. Cover with salted water and bring to a boil. Cook 4 minutes. Drain and immediately add to the soup. Test noodles for desired firmness before serving.
