Golden Pumpkin Soup Recipe

3 green onions, finely sliced
2 Tbsps butter
1 cup grated carrot
1 tsp ground cumin
1 tsp ground ginger
2 cups cooked, mashed pumpkin or 1 can
1 can creamed corn
1/2 tsp salt
freshly ground pepper
3 cups water, stock, or apple juice

If you use fresh pumpkin choose small pumpkins cup them in half and trim a small portion off of each end so that they will sit level (like a soup bowl, after the insides are cleaned out wash and dry the pumpkin very well inside and out. Melt the butter in a saucepan and put in the carrot, corn and pumpkin. Stir in the remaining ingredients and simmer for 8-10 minutes. Serve in the pumpkin halfs garnished with chopped green onion and croutons.
