Clutterbug's Potato Leek Soup Recipe
1/4 c butter
2 c chopped leeks (white part only)(about 2 leeks)
2 med onions chopped
8 c good quality chicken stock
salt and pepper to taste
Melt butter in a large saucepan . Add leeks and onions. Saute 5 min. over med heat. Stir in chicken stock, salt and pepper. Bring to a boil. Simmer another 5 min.
1/4 c butter
1/3 cup all purpose flour
3 c diced potatoes
Melt butter in small saucepanover med heat. add flour cook 2-3 min., dont brown flour. Add to soup mixture stirring constantly. cook soup until it returns to a boil and thickens. Add potatoes; cook until tender, about 5 min., season. Serves 6.
NOTE: for a richer soup add half cup of heavy cream at the end of cooking, But i think it's rich enough without it!
