Chicken Bean Soup Recipe

2 cups dried mixed beans
2 quarts water
2 cups chopped cooked chicken
1 large onion, chopped
1 garlic clove, minced
1 chicken bouillon cube
1 tsp salt
1 can RoTel
1(14 1/2 oz) can tomatoes

Soak beans over night in water to cover two inches above beans. Drain. Bring beans, 2 qts. water and remaining ingredients except tomatoes and RoTel to a boil. Cover and reduce heat and simmer for 1 to 1 1/2 hours. Stir in both cans of tomatoes. Return to boil. Cover and simmer thirty minutes more, or till beans are tender, adding more water if necessary.
