Bean Soup Mix In A Jar Recipe
Yield: 2 Servings
3 T dried minced onion
3c dry navy or lima beans
2 T wheat berries
3c dry split or whole green peas
2 T celery flakes
2T pearl barley
1 T instant beef bouillon granules
3c dry garbanzo beans
1 tsp. dried basil; crushed
7 tsp. garlic powder
3c dry red kidney or pinto beans
1 bay leaf
(You might include with the jar of Soup Mix, a pint size can of tomatoes.)
For seasoning mix: In a custard cup stir together the dried onion, wheat berries, barley, celery flakes, garlic powder, bouillon, and basil.
To assemble: Transfer the seasoning mix to a 1-pint jar or small plastic bag. Layer the beans and peas on top of the seasoning and place the bay leaf on top. Cover the jar or bag tightly.
May be stored in a cool, dry place for up to 9 months.
To make Bean Soup: In a large pot, bring soup mix and 6 cups water to a
boil, reduce heat. Cover and simmer for 2 minutes. Remove from heat and let stand, covered, for 1 hour. (Or, in a covered soup pot, soak mix overnight, but do not drain in the morning.) Add 1 lb. smoked pork hocks or beef shank crosscuts to the beans. Bring to boiling, reduce heat, cover and simmer for 11 hours. Remove meat from soup and when cool enough to handle, remove the meat from the bones and chop it. Discard bones, remove bay leaf from soup and discard it. Return the meat to the soup and add one pint undrained tomatoes and 1 medium carrot cut up. Cover and simmer soup 30 minutes. If desired, season to taste with salt. (Makes 6 main dish servings.)

This recipe must have errors in it and/or is missing some information. I would like to have Seajay clarify what size jar is required for this recipe and what it means when it says "Yield: 2 servings". Does that mean that this is a recipe that will fill two jars? The recipe calls for a total of 12 cups of beans in addition to the seasonings. That would require 3 or 4 quart jars.
The instructions for cooking say to put 6 cups of water into a pot with the soup mix and boil it for 2 minutes. It never tells you to add more water and it seems that after 11 hours of simmering with just those 6 cups of water covering those beans the pot would have long since boiled dry.

I think this recipe can be saved. It appears there are several errors...possibly just typos. Using a very similar recipe for soup I would suggest the following changes:
1) cover bean with water and let soak overnight. Drain in the morning 2) Then add 6 cups of water to soup mix...add meat, etc. (Follow original recipe). Simmer 1 hour, not 11. Remove bones, bay leaf and add tomatoes and carrot. Simmer 30 minutes and serve. Makes 6 main dish servings.
The actual soup mix of the three types of beans, etc. should fill 3 quart jars. You need to use 1 jar of the mix to make the soup.
I will try the changes this week and post the results.
