Abruzzi Celery Soup Recipe

Ingredients
  • 2 tbsp olive oil
  • 1 onion chopped fine
  • 3-4 bacon slices (diced)
  • 2 tbsp tomato paste
  • 2 bunches celery, cut in 1/2" Slices
  • 1 qt. Hot stock or broth
  • Salt & Pepper
  • 1/2 cup uncooked long-grain white rice
  • 1/4 cupParmesan cheese (1 oz.)

Directions

  1. Heat oil in large saucepan.
  2. Add onion and bacon; Saute until onion begins to brown.
  3. Stir in tomato paste and celery.
  4. Cook 5 minutes,stir occasionally.
  5. Gradually stir in stock or broth.
  6. Cover and simmer 20 Minutes.
  7. Season with salt and pepper.
  8. Stir rice into soup/ Simmer 15 minutes or until rice is tender.
  9. Pour into tureen or serve in individual bowls; Makes 4 servings.
  10. Sprinkle cheese over the top.
