Shrimp And Rice Salad Recipe
3 cups cooked rice, chilled
6 to 10 oz package frozen cooked shrimp, thawed
1 1/2 cups diced celery
2 green onions, chopped
1 can (8 oz) sliced water chestnuts, drained
1 pkg (10 oz) frozen small peas, thawed
1/2 cup mayonnaise
2 tsp soy sauce
Lettuce leaves

Combine all ingredients except lettuce leaves, mixing well; chill 2 hours. Serve on lettuce leaves. Serves 6.
