Shrimp And Orzo Recipe

1 C uncooked orzo
1 T olive oil
2 cloves garlic
20 large shrimp, peeled and deveined
1/4 C chopped parsley
juice and zest of 1 lemon
1 C dry white wine
5 T unsalted butter
1 T capers

Cook orzo according to package. Drain, toss with olive oil, and add salt and pepper to taste. Meanwhile, heat 1 tsp. oil in large skillet. Add garlic; cook over low heat for 1 min. Add shrimp, salt and pepper to taste, and 2 T parsley; cook for 3-4 min. Turn and cook 3 min more, or until opaque. Remove from pan and keep warm. Add lemon juice and wine to skillet. Bring to a boil, lower heat, and reduce by half, about 2 min. Remove from heat. Add remaining parsley; stir in butter, lemon zest, and capers. Adjust seasonings. Pour over shrimp, and serve on a bed of orzo.
