Baked Walleye Recipe
3/4 cup chopped onion
3/4 cup chopped green pepper
3/4 cup chopped celery
1 Tbl dried parsley flakes
1/2 tsp garlic powder
1/2 tsp pepper
1/2 tsp seasoned salt
1 cup V-8 juice
1 pound walleye fillets
In a saucepan, combine all but fish; bring to a boil. Reduce heat; simmer, uncovered, until vegetables are crisp-tender, stirring occasionally, about 5 minutes. Place fish in a greased 13x9x2" baking pan. Pour vegetable mixture over the fish. Cover and bake at 350°F for 30 minutes or until fish flakes easily with a fork.
My comments:
I used halibut instead of walleye. Really you can use any bottom fish. And of course I didn't do much measuring! a dash here, a pinch there. Chopped veggies til I thought there was enough... The juice was really thin and watery, so you might want to add flour of something as a thickener. We served the juices and veggies over rice.
