White Chili Recipe
3 chicken breasts diced (or equivalent left over chicken)
1/2 medium onion chopped
4 sliced stalks celery chopped
4 cloves garlic minced
5 Cups chicken broth
2 cans white beans-cannellini, navy, garbanzo-whatever is your favorite
1 Tbs. Cumin
1 Tsp white or black pepper
16 oz. fresh mushrooms, sliced or chopped or large can and include the juice
2 Tbs. dried cilantro
1/2 tsp oregano
Saute onions until translucent, not browned. Add all other ingredients and bring to boil. Lower heat and simmer at least 25 minutes. Make the night before serving, refrigerate and reheat. This will insure the fullest
flavor. Serve over noodles or rice.
