Open Face Quesadillas Recipe
4-5 C Chicken strips
1 tsp. cumin
1 tsp garlic salt
tsp. ground cayenne pepper
tsp. dried oregano
Monterey Jack cheese (I usually get the Fiesta/Mexican blend, but whatever cheese you have works too)
Tortillas
Lettuce, black olives, Salsa

Heat Chicken strips in microwave until heated thoroughly. Cut into smaller chunks. Toss with spices and add salt to taste. Heat, on med- high, a 12" skillet and spray with olive oil spray. Place one tortilla on hot skillet. Sprinkle with thin layer of cheese. Add to 1 C chicken. Heat until cheese is melted and when lifted, tortilla is crispy on the bottom. Watch closely to not burn. Top with lettuce, olives and salsa.
