Green Chili Chicken Meatballs Recipe
1 medium onion, finely chopped
1 large tart green apple, peeled cored and finely chopped
2 teaspoons cooking oil
3/4 cup soft bread crumbs
1 4-ounce can green chili peppers, drained
2 tbsp. frozen apple juice concentrate, thawed
1 slightly beaten egg white
1/2 teaspoon salt
1/4 teaspoon allspice
1/4 teaspoon cinnamon
1/4 teaspoon cumin
1/4 teaspoon dried marjoram
1/8 teaspoon cardamom
1/2 pound ground chicken or turkey
1/2 pound lean ground pork
HONEY MUSTARD SAUCE
Cook onion and apple in oil in a med skillet over med heat about 5 minutes or until tender. Combine onion mixture, bread crumbs, chili peppers, apple juice, egg white, salt,
allspice, cinnamon, cumin, marjoram, and cardamom in a med. bowl. Mix in ground chicken or turkey and pork til combined. Form into 1" balls.
Arrange meatballs in a baking pan. Bake, uncovered, in a 350°F oven for 15-20 min or until no pink remains. Toss w/ honey mustard sauce.
HONEY MUSTARD SAUCE: Combine 1/3 cup honey, 3 tbsp. dijon style mustard, 2 tbsp. finely chopped onion, 2 tbsp. apple juice, and 1/8 teaspoon ground red pepper
in a saucepan. Heat to boiling. Reduce heat and boil gently uncovered for 7 minutes or til onion is tender and sauce is thickened.
