Greek Chicken With Olives Recipe
1 chicken, cut up
3 tbsp. olive oil
5 cloves chopped garlic
3 yellow onions, peeled and chopped
3 cups ripe fresh tomatoes, coarsely chopped
1 6-oz jar green olives with pimientos
freshly ground pepper
1 tbsp. oregano
1 cup dry red wine
salt to taste
In a large skillet, brown the chicken in the olive oil..you can do this in 2 batches.
Remove chicken from pan and drain most of the oil.
Saute the garlic and onions until limp-about 5-7 minutes.
Add the tomatoes and olives, saute until tomatoes are soft.
Add the pepper, oregano, wine and chicken.
Cover and simmer about 30 minutes until chicken is tender.
**Says to serve with a warm, crusty loaf of bread, a green salad with bleu cheese, and a rich Italian red wine such as Barolo or a lush concentrated Zinfandel
