Curried Satay Recipe
1 tsp. grated line or lemon rind
1/4 cup Lime of lemon juice
2 tbsp. Granulated sugar
2 tbsp. vegetabel oil
2 cloves of garlic , minced
1 tbsp. Curry paste or powder
1/4 tsp. each salt and pepper
1 lb Pork loin or chicken breasts
eight 8" wooden skewers

In a large re-sealable freezer bag whisk together line rind and juice, sugar, oil garlic, curry paste, salt and pepper.

Trim any fat from pork. Cut thourgh center horizontally to make 2 slices about 1 inch thick. Cut across the grain into 1/4" thick strips. Thread 2 or 3 strips onto each of eight 8" wooden skewers Add skewers to the freezer bag with the marinade and flatten and freeze! Serve with basmati rice. and fresh green beans! Or your fav vegetable! (for the chicken just cut into chunks or strips!).

Ready to cook? Place skewers on greased grill over med-high heat close lid and cook turning once! Brushing with remaining marinade for 3-4 minutes or til browned on the outside and just a hint of pink remains inside pork (chicken cook untill no longer pink at all inside!).
