Chicken Satay With Peanut Sauce Recipe
(Canada's Chicken Producers)

1 lb. boneless, skinless chicken breasts
bamboo or metal skewers

Marinade:

1 tsp. curry powder
1 clove garlic, minced
2 Tbsp. each soy sauce and lemon juice
1 Tbsp. sugar

Peanut Sauce:

3 Tbsp. smooth peanut butter
2 Tbsp. each honey, soy sauce and water
Dash of Tabasco

Cut chicken into thin, flat strips. Combine marinade ingredients. Combine with chicken. Allow to rest for 10 minutes to 1 hour in the fridge.

Combine ingredients for the sauce and heat in microwave for 30 seconds. Whisk. Heat again and whisk til combined.

Thread chicken on skewers. Cook on med. hot BBQ for4 or 5 minutes/ side or til chicken is cooked through. Baste with peanut sauce and serve hot or cold.

(Note: Sauce can be thinned with 1 Tbsp. hot water. Good on rice!)
