Chicken Or Turkey Divan Recipe
Sliced turkey or chicken (2-3 slices per serving)
4 slices hot buttered toast, or butter crackers
1 package frozen broccoli or asparagus, cooked and well drained
2 cups Mornay sauce (recipe to follow)
Grated parmesan cheese

Preheat oven to 400°F. Butter a 9x12" shallow heatproof dish. Place toast or a layer of crackers on the bottom of the dish. Next place a layer of chicken or turkey slices. Lay broccoli or asparagus on top of meat. Cover with 2 cups Mornay sauce, sprinkle with parmesan cheese, and heat in the oven until sauce is brown and bubbling. Serve at once.

Mornay Sauce:

2 Tbs. Butter
2 Tbs. Flour
1 cup milk
1 egg yolk
2 Tbs. Cream
2 Tbs grated parmesan cheese
2 Tbs grated gruyere cheese

Prepare a cream sauce with the butter, flour and milk-melt butter over low heat, add flour, slowly stir in milk and cook until thickened and smooth. Beat egg yolk and cream together until blended. Add a little of the cream sauce to the egg yolk mixture, stirring constantly, then return the mixture to the rest of the sauce and cook until well heated. Then add parmesan and gruyere. Keep stirring until cheese melts and sauce thickens.
