Chicken Broccoli Casserole Recipe
East Coast Living Magazine

1 pkg Chicken Breasts
1 bunch Fresh Broccoli
1 can Cream of Chicken (or mushroom)soup
1/2 cup Mayonnaise
Curry powder to taste
2 cups cooked Rice
1/2 cup Bread crumbs
Butter to moisten
1/2 cup grated Cheddar Cheese

Brown chicken in a hot skillet. Set aside. Lightly steam broccoli and chop into bite-sized pieces. Whisk together soup, mayo and curry. Add the broccoli, chicken and rice. Turn into oven proof casserole dish. Combine bread crumbs and butter, sprinkle on top. Finish with grated Cheddar. Bake at 350°F for 20 minutes or until bubbly.
