Budget Fried Chicken Recipe
I took one whole fryer chicken and cut it up and took off the skin (would work fine for already skinless chicken, just not as cheap then).

I dipped it in a mixture of:

1/4 cup sour cream
2 egg whites
1/4 cup milk

From the dip, roll it in this mixture (I put it all in a zipper bag):

2 cups corn flakes
2 tbsp Lawry's salt
1 tbsp Mrs. Dash
2 Tbsp minced onion
1/4 cup flour

Crush the cornflakes with a rolling pin. Bake for one hour at 350°F. Tastes better than KFC chicken...even my DH agreed, and he NEVER likes my chicken!
