Youvetsi Recipe
(Greek Oven Stew)

3 lbs. lamb shoulder or chops
Salt and pepper to taste
1 large onion, chopped
1 can 14 oz. tomatoes, chopped
4 tbsp. tomato paste
2 cups hot water
1 pinch sugar, optional
6 cups hot water
2 cups rosamarina or orzo
1 cup grated romano (or parmesan cheese, optional)

Rub meat with salt and pepper. Place in roasting pan and bake at 375°F until meat begins to brown. Remove from oven and reduce temperature to 350°F. Combine onions, cinnamon stick, tomatoes, tomato paste, 2 cups hot water, and sugar in small bowl and pour around meat in pan. Bake until meat is tender. (About 1 1/2 to 2 hours). When done remove meat from pan. Set aside and keep warm. Add 6 cups hot water to pan and add orzo or rosamarina. Cover and bake for 35 mins. or until done. Stir occasionally. The grated cheese, if desired, may be sprinkled over this when served.
