Leftover Cornbread Salad Recipe
1 1/2 pounds pork sausage
2-3 cups leftover cornbread, crumbled
1 large Tomato
1 medium bunch of green onions, sliced thin
2-3 tbsp mayo
salt and pepper to taste
1. Crumble chilled cornbread
2. Chop tomato and onions and add to cornbread
3. Stir in mayo until all is lightly moist
4. Season to taste with salt and pepper
5. Chill for 30 min to 1 hour
****NOTE*****I always add a bit of lettuce and sometimes some grated cheese to this a salad; just isn't the same for me without it.
