Ham Pot Pie Recipe
Prep Time: 12 minutes
Cook Time: 20 minutes
Makes: 4-5 servings

Smoky ham is a great choice for a pot pie because it comes fully cooked. This reduces the cooking time from the more common chicken pot pie, allowing you prepare and bake the pie in less than 35 minutes. With its abundance of meat, vegetables and flaky pastry topping, it makes a complete meal.

Ingredients

4 tablespoons (1/2 stick) butter or margarine
1/3 cup all-purpose flour
1 can (14 1/2 ounces) low sodium chicken broth
1/4 cup regular or low fat milk
1 teaspoon Dijon Mustard
1 pound ham steak, trimmed and cut into 1/2" pieces
1 cup frozen mixed peas and carrots
1/2 cup chopped green onions, with tops
1 9-inch prepared pie crust

Instructions

1.Preheat oven to 425°F.

2.In a medium skillet over medium heat, melt butter. Add flour and cook, stirring, for 1 minute or until incorporated.

3.Slowly whisk in broth. Cook, whisking, until smooth. Whisk in milk and mustard. Remove from heat. Stir in ham, frozen vegetables and green onions. Pour into 9" quiche or pie dish.

4.Top with crust, trimming to fit. Fold down edges and press onto rim of pan. Cut slits in pastry to vent steam.

5.Bake for 20 minutes or until golden brown.
