Grilled Pork Chops With Italian Relish Recipe
4 large pork chops

Marinade

1/4 cup soy sauce
3 T. Dijon mustard
1 tsp. chopped garlic
1 T. honey
juice of 2 lemons
1 T. dried sage
1/4 cup olive oil

Relish:

6 roma tomatoes - seeded, diced
3/4 cup chopped red onion
1/4 cup red wine vinegar
2 T. olive oil
1 T. chopped garlic
2 T. minced fresh basil
1 T. minced fresh oregano

Whisk together in a mixing bowl the ingredients for the marinade. Place the pork chops in a large freezer bag and pour marinade into bag. Place bag into refrigerator to marinate for 1 hour. To prepare the relish, combine all ingredients in a small bowl. Set aside. Place pork chops in a 350°F oven for 30 minutes. To finish, place on barbecue grill for 2-3 minutes per side. Serve with relish.
