Castilian Roast Lamb Recipe
Leg Of Lamb Or Lamb Roast 2 tbsps lard, salt, pepper
1/4 tsp paprika
1 clove crushed garlic
2 cups water
2 cloves garlic peeled
3 slices onion
1 bay leaf
2 sprigs parsley
2 tbsps vinegar
1/4 tsp rosemary
1/4 tsp oregano
1/4 tsp cumin
juice of 1 lemon

preheat oven to 450°F. rub lamb with lard, then sprinkle with salt, pepper & paprika. rub in crushed garlic. roast lamb 15 minutes. meanwhile boil the remaining ingredients in a saucepan. reduce oven to 350°F and pour about 1/2 cup of the liquid over the meat and continue roasting, 12-20 minutes to the pound, depending on desired doneness. baste every 10 minutes with more liquid, replenishing with more water if necessary, and keep it simmering all the while the lamb is roasting. slice and serve with sauce.
