Amy's Quickie Pork Chop Casserole Recipe
Ingredients
  • 4-6 boneless pork chops
  • 1 onion (sliced)
  • 4-6 potatoes (sliced)
  • 1 can green beans (drained)
  • 1 can whole kernel corn (drained)
  • 1 can Reduced fat Cream of Chicken soup
  • 1 cup fat free sour cream
  • 1/2 tsp garlic powder
  • Salt and pepper to taste
  • 1 tube reduced fat Ritz crackers
  • 1/2 cup fatfree butter

Directions

  1. Trim all fat from pork chops.
  2. Cut them in thin strips.
  3. Mix all ingredients together except the crackers and butter.
  4. Pour into a 9" X 13" Baking dish.
  5. Bake 1 hour in a preheated 375°F oven.
  6. Crush crackers, pour melted butter over them.
  7. Remove casserole from the oven and top with cracker crumbs.
  8. Return to oven until cracker crumbs are Browned.

Comments
Note: You could do this in your crock pot as well. And simply omit the crumb topping if desired. I would cook it on low for about 4-6 hours.
