Broccoli, Garlic And Cheese Pasta Recipe
When the Pasta Cooks by Andrew Schloss
1 pound shaped pasta -- such as ziti, penne or raddiatore
1 bunch broccoli (about 1 lb) -- cut into florets
1 clove minced garlic
3 tbsp extra-virgin olive oil
1/2 cup freshly grated Parmesan and/or Romano
salt and freshly ground pepper to taste
Bring a large pot of lightly salted water to a boil. Add the pasta and stir a few times to ensure that the pasta does not stick to itself. Boil vigorously for the time recommended on the pasta package or until pasta is tender. Four minutes before the pasta will finish cooking, add the broccoli to the water. While the pasta cooks, combine the garlic, olive oil, cheese, salt and pepper in a serving bowl. Drain the pasta and broccoli and toss with the garlic mixture. Serve immediately.
