Amazing Pasta Recipe
  • 1 pkg Fresh Spinach, chopped
  • 1 cup Onion, chopped
  • 3 cloves Garlic, chopped
  • 1 tsp dried basil
  • 1 tsp lemon juice
  • 1 pkg Ricotta Cheese
  • 1 tbsp Parmesan Cheese
  • 2 eggs
  • 3-4 tbsp Sugar
  • 1 pkg Jumbo pasta shells
  • Tomato Sauce (home made if possible)
  • Salt & Pepper (to taste)


  1. Fry onion & Garlic in oil until tender, add spinach and lemon juice and fry until spinach starts to wilt slightly.
  2. Set aside and let cool.
  3. Meanwhile cook pasta shells in boiling water until al dente.
  4. Combine the Spinach mixture with Ricotta Cheese, eggs, Parmesan cheese, and sugar, mix well.
  5. Stuff each shell with the mixture and place in baking pan.
  6. Pour tomato sauce over shells making sure the entire bottom of pan is covered but do not cover shells entirely.
  7. Sprinkle Parmesan cheese over top and salt & Pepper to taste.
  8. Bake for approx 45 min at 400°F.
