Cream Of Broccoli Soup Recipe
Low fat cream of broccoli soup that tastes like the real thing.

1 cup chopped onion
4 cups chopped broccoli
2 cups peeled potato
1/2 tsp garlic powder
2 10 oz cans chicken broth (low sodium)
1 bay leaf
3/4 cup reduced fat cheddar cheese shredded
1 12oz can evaportated skim milk
dash pepper

Coat lg dutch oven w/ cooking spray. On med heat saute onion 5 min. Add 2 cups chopped brocc,potato, garlic powder, broth and bay leaf. Bring to a boil. Cover, reduce heat and simmer 20 min or until veggies are tender. Discard bay leaf. Place half of mixture in a blender and process til smooth. Repeat with remaining mixture. Return to pan, add cheese, milk, pepper and remaining broccoli. Cook at med. heat until broccoli is tender. Yummy. Except for some reason I couldn't stomach it during my last pregnancy.
