Lemon Peach Waldorf Salad Recipe
(Serves 6)
1 (4-serving) package sugar-free instant vanilla pudding mix
1 (4-serving) package sugar-free lemon gelatin
2/3 cup nonfat dry milk powder
1 1/3 cups water
3/4 cup reduced-calorie whipped topping
3/4 cup finely chopped celery
2 cups (4 medium) fresh peeled and sliced peaches
1/4 cup (1 oz.) chopped walnuts
In a large bowl, combine dry pudding mix, dry gelatin, dry milk powder and water. Mix well using a wire whisk. Blend in whipped topping.
Add celery, peaches and walnuts. Mix gently to combine.
Cover and refrigerate at least 30 minutes. Gently stir again just before serving.
