Italian Bean Soup Recipe
1 cup dry navy beans
1 8-oz can tomato sauce
1 cup chopped onion
1 cup chopped carrots
1/2 cup chopped green pepper
2 cloves garlic, minced
2 Tbsps instant beef bouillon granules
1 1/2 tsps each, dried crushed basil and dried crushed oregano
1/2 cup uncooked macaroni
Rinse beans, add 8 cups water. Boil 2 minutes. Remove from heat; cover and let stand 1 hour. (Or, soak in water overnight). Do not drain. Stir in 1 tsp salt and remaining ingrediants, except macaroni. Cover,
simmer 90 minutes. Stir in macaroni, cook, uncovered 10-15 minutes. Serves 6-8.
