Hash Brown Casserole Recipe
1 1/2 cups chopped onion
3 tbsp. flour
1/2 tsp. dry mustard
1/4 tsp salt
1 1/2 cups skim milk
1/2 cup low sodium chicken broth
1 1/2 cups shredded fat free cheddar cheese
3/4 cup fat free shredded swiss cheese
1/2 tsp pepper
1 cup fat free sour cream
1 (32 oz) pkg frozen southern-style hash brown potatoes, thawed
Paprika for sprinkling

Preheat oven to 350°F. Spray a 9x13x2" baking dish with vegetabel oil cooking spray. Set aside.

Coat a medium saucepan with cooking spray and add the onion and saute til tender bout 3-5 min. Add the flour, mustard and salt; stir well and cook 1 min. Remove from heat.

Gradually stir in the milk and broth with a wire whisk until blended. Cook until thickened, stirring constantly. Remove from the heat; add the cheeses and pepper stirring until cheeses have melted. Stir in sour cream.

Combine the cheese mixture and the potatoes . Stir well. Spoon into your prepared baking dish. Sprinkle with paprika. Cover with foil and bake 35 minutes then uncover it and bake another 35 minutes!

This potato dish took me only about 15 minutes to get together including clean up of the fry pan, etc.
