White Bean Dip Recipe
12 servings/Serving size: 2 Tbsp

This spread resembles the wonderfully aromatic French boursin cheese, but contains much less fat.
1/2 cup minced scallions
3 garlic cloves, minced
1 15-oz can white beans (navy or cannelini)
2 tsp prepared Dijon mustard
1 Tbsp fresh lemon juice
1 tsp olive oil
2 Tbsp minced parsley
1 Tbsp minced basil
1 tsp minced thyme leaves
1 tsp minced dill
1 tsp minced tarragon
1/4 tsp nutmeg
Fresh ground pepper and salt to taste
1.Combine all ingredients in a blender or food processor. Process until smooth. Serve with crackers or pita bread.
