Plum Jelly Recipe

5 1/2 C prepared juice
1 pkg powdered pectin
7 1/2 C sugar

Combine juice and pectin in a large sauce pot. Bring to a rolling boil. Add sugar. Return to a rolling boil; boil hard 1 minute, stirring constantly. Remove from heat. Skim foam if necessary. Pour hot into hot, sterilized jars, leaving 1/4" head space. Adjust caps. Process 5 minutes in a boiling water bath. Yield: about 10 half pints.
