Paul Kirk's Basic Kansas City Barbecue Seasoning Recipe
Makes 3 cups (I halve this recipe)

1 cup cane sugar
1/2 cup garlic salt
1/3 cup paprika
1/4 cup season salt
3/4 cup BBQ spice
2 Tbls onion salt
2 Tbls celery salt
2 Tbls chili seasoning
2 Tbls. black pepper
1 Tbls. ground ginger
1 Tbls lemon pepper
2 Tbls dry mustard
1/2 tsp. thyme
1/2 tsp. cayenne pepper

Sift all ingredients together. Store in airtight container away from sunlight. Sprinkle on ribs, brisket, chicken, steak,etc., as if you were putting on heavy salt and pepper.
