No Sugar Strawberry Jam Recipe
1 quart strawberries, crushed
1 package powdered pectin
3-4 tsp liquid non sugar sweetener
1 TBS lemon juice red food coloring (optional)

Combine strawberries, pectin, non-sugar sweetener and lemon juice in a medium sauce pot. Bring mixture to a boil; boil 1 minute, stirring frequently to prevent sticking. Remove from heat. Add food coloring, if desired. Continue to stir 2 minutes. Ladle jam into can or freeze jars, leaving 1/2" headspace. Adjust 2 piece caps. Let stand in fridge until set, not to exceed 24 hours. Label and freeze. Yield: about 3 half pint jars
