Kasey's Salsa Recipe
4 cups coarsely chopped plum tomatoes
1 cup chopped sweet red pepper
1/2 cup chopped onion
1/2 cup white vinegar
1 Tbsp sugar
1 - 2 jalapeno peppers, diced (I use 4 cause I like it hot)
2 cloves garlic, minced
1 tsp. oregano
1/2 tsp. salt
1/4 tsp. cumin (or more to taste)

Boil ingredients together over medium heat for 1 hour or until salsa thickens. Store in sterilized Mason Jars. Serve with tortilla chips. Also great on hot dogs, hamburgers and pasta.


If fresh plum tomatoes are not available, or to save time, canned tomatoes work well. There are cans of diced tomatoes out on the market which I use all the time. Just make sure they are well drained.
