Hot Pepper Peach Cheese Ball Recipe
2 8 oz. packages of cream cheese, softened (I used Neufschatel and think it works fine)
1/3 cup (a particular brand of pepper peach preserves, but you can use any spicy, peach preserves you can find. I've used a jalapeno peach jelly before with good results)
1 heaping T chopped onion
1 T chopped jalapeno pepper
Monterey Jack cheese

Thoroughly mix the cream cheese, preserves, onion, and jalapeno pepper together. Chill for at least one hour. Form into ball and roll in cheese. Chill until served. Can be made up to 48 hours in advance.

I served it with Lowfat Triscuits & Wheat Thins, but it'd be good on any crackers.
