Cowboy Caviar Recipe
1 can(15 ounces) black beans, rinsed and drained
1 can(4 ounces) chopped ripe olives, drained
1 small onion, finely chopped (about 1/4 cup)
1 clove garlic, finely chopped
2 TBS vegetabel oil
2 TBS lime juice
1/4 tsp salt
1/4 tsp crushed red pepper
1/4 tsp ground cumin
1/8 tsp pepper
1 package (8 Ounce) cream cheese, softened
2 hard cooked eggs, peeled and chopped
1 green onion (with top) chopped
Mix all ingredients except cream cheese, eggs and green onion. Cover and refrigerate at least 2 hours. (I do it overnight)
Spread cream chesse on serving plate. Spoon bean mixture evenly over cream cheese on serving plate. Arrange eggs on bean mixture in ring around edge of plate; sprinkle with onions.
